Grilled Corn and Zucchini Salad
serves 4
Ingredients
- 4 ears corn
- 2 ea zucchini, trimmed, 1/4-inch thick bite-size slices
- 3 ea scallions, small chop
- 1/3 C cilantro, chopped
- 6 oz Greek yogurt
- 3 T lime juice
- 1 T honey
- 4 oz queso fresco, feta, goat, cheddar or cream cheese, diced
Instructions
- Coat the corn and zucchini with olive oil, then grill. Remove the corn kernals from the cobs.
- Mix together the remaining ingredients, then toss with the grilled vegetables.
- Plate and serve.
